Last week, we tried another crock pot recipe: Santa Fe Chicken! It had a mixed review in our house. I loved it but Cody kind of felt like he was eating beef stew. I figured I'd post the recipe anyway.
Ours was definitely soupy-er than the picture above but it was still very good! We got the recipe from Skinny Taste.
The ingredients:
- 1.5 lbs of chicken breasts-we used tenderloins
- 14.4 oz of diced tomatoes with chiles. We used mild rotel and it was about a can and a half
- 15 oz of black beans (1 can)
- 8 oz of frozen corn
- 1/4 cup of chopped cilantro
- 3 chopped scallions (we used 4)
- 1 tsp of garlic powder, onion powder, cumin (we used chili seasoning), cayenne pepper (we used red pepper), salt to taste (not sure if we actually ever put the salt in!)
You put all of your ingredients in the crock pot (even the scallions, even though the recipe pic looks like you add that on top), cook on low for 10 hrs or high for 6 hrs. About 30 minutes before you're ready to eat, take the chicken and shred it then add it back to the crock pot.
The recipe says to have it with rice or tortillas but we ate it on its own (probably why Cody felt like he was having soup!) and it was delicious!
There was plenty for left over after feeding the two of us and we both got full without sides. It froze well, but we haven't reheated it yet but I think it will be fine.
